Our chefs raise their own Bresse chickens. The Bresse is the only chicken worldwide to be protected by a certificate of designation of origin. Because of the specific composition of the soil in Bresse chickens enjoy a different and unique natural diet. Thanks to the plots in which they can roam freely and a four-month breeding period which is stress-free, completed with a two-week buttermilk regimen, the texture of Bresse chickens is unparalleled, with a subtle flavour.
Pakhuis, Dock's Café and La Quincaillerie together have purchased the 76-hectareLe Devant farm, with its pastures and forests near Bresse. There one-day chicks grow at their own pace into robust Bresse chickens. The farm has its own slaughterhouse near the farm's pastures. Here the chickens are processed and sent exclusively to our three restaurants. From the egg to your plate in Ghent, Antwerp and Brussels.
